Johnson & Wales University has six campuses across the country, with over 16,000 students. Founded in 1914 as a business school, the University now offers career educational opportunities in business, technology, and Culinary Arts. Four of the school's campuses offer the culinary programs, and not every program is offered on every campus.

Operating on a three term per year schedule, students attend classes four days per week. The school emphasizes hands-on training in the student's major from the outset of his or her freshman year. The University offers a traditional academic experience, complete with residence halls, fraternities, and athletic/recreational activities.

Johnson & Wales University is justifiably proud of the placement rate of its graduates. 98% of the school's graduates find employment in their career field within 60 days of graduation. Degree Programs and Courses of Study

Associate and Bachelor Degree in Culinary Arts

The culinary programs at JWU are designed so that students can earn their associate degree in two years, and if desired, extend their education with the bachelor's degree.

In the associate program, students receive hands-on training in the production of food, including baking, garde manger, and regional cuisines. Students are also exposed to principles of kitchen management, including cost control and sanitation. Students also have the opportunity to participate in an internship, possibly abroad.

In the bachelor program, students have a chance to broaden their knowledge of advanced culinary techniques, as well as develop management and critical thinking skills essential for a leadership role in a restaurant or food service operation. Advance coursework includes A La Carte and Buffet Catering, Food Science, and Dining Service Supervision. The Bachelor program is capped with an advanced co-op or term abroad during the senior year.

Associate and Bachelor Degrees in Baking & Pastry Arts

The Associate degree program prepares students for positions in production and contract bakeries or restaurants. The Bachelor degree program provides the additional training necessary to shorten the path to becoming an executive pastry chef or bake shop owner.

While earning their Associate degree, students use the latest technology to prepare French pastries, artesian breads, cakes, and plated desserts. They also learn to produce chocolate pieces and confections. While studying for their Bachelor degree, students create 3D showpieces, and have the opportunity to participate in national competitions.

Additional Bachelor Degree Programs

Students who have completed the requirements for an Associate degree in Culinary Arts or Baking and Pastry Arts have the option of earning a specialized bachelor degree in the nutrition or food service management fields.

The Bachelor of Arts in Culinary Nutrition lets students explore advanced topics in nutrition, healthy menu development, and food science. It is accredited by the Commission on Accreditation for Dietetics Education (CADE) of the American Dietetic Association. .

The Bachelor of Science in Food Service Entrepreneurship offers concentrations in Food & Beverage Management and Beverage Service Management. The Food & Beverage Management program includes courses in facilities design, club management and menu analysis, while the Beverage Service Management program includes advanced studies in wine and spirits and non-alcoholic beverages.
